Toasted Honey Dijon Eggs on Spinach

What can I say some days you feel fancy…this is NOT one of THOSE days.
I woke up in that weird phase of every morning where your not really sure if your actually hungry or you just need another couple of minutes to wake really wake up and decide what you REALLY want. Coffee, tea, yoga, meditation, running, walking, stretching, bathroom protocols; all of these things and more have people in such a frenzy in the morning to make time before your out the door ready to start your day.
So staying true to those who like me enjoy a nice light, quick, healthy and cheap breakfast this is one of many that I will be presenting to you all.
It’s almost ninja like subtle and it packs a real kick with that Dijon mustard!
Eggs+spinach+toast+honey+mustard=your new favorite quick to go meal. Although I have never tried this you COULD probably eat this LITERALLY “on the run”.
- 2 Large Eggs $0.24
- 2 Slices bread $0.28
- 1 Cup Spinach Leaves $0.23
- 2 tsp Honey Dijon Mustard $0.04
- 1/2 tsp S&P $0.02
- 1/2 tsp Ground Rosemary $0.03
- Place eggs unbroken into a sprayed pot on medium high and cover for 8-10 minutes until firm and cooked. *If you poke the yolk(yellow) of the egg and it is firm than you know it's fully cooked.
- Toast two slices of bread then place your spinach evenly onto the two pieces of toast. Place one egg on each piece of toast and topped with as much mustard as you can handle!
