Plop down the tomato paste and the CHUNKY peanut butter. Mix well.
Add the vegetable broth and kale. Place a lid over the top of the pot and crank the heat up to high.
Once the stew reaches a boil, remove the lid and lower the heat back down to a low. Let it simmer for 15 minutes or until the potatoes are soft.
Use a spoon to mash up about half of the softened sweet potatoes.
Taste test and make adjustments if necessary.
Serve it up hot on a chilly winter day.
Add some white rice to really give this dish some staying power.
