Heat the coconut oil in a pan on medium high heat.
Add the chopped onion to the heated pan and saute until onion is clear or 4-5 minutes.
Add curry, chili and garlic powder and saute for 1 minute.
Oil or butter the inside of your slow cooker or crock pot and turn it on low.
To the sauteed onions stir in the coconut milk, tomato paste, salt & pepper.
Reduce heat to low and add corn starch and whisk until all lumps are gone.
Turn off the heat.
Add your chicken bits into the slow cooker and then pour the curry sauce over the chicken.
Mix the chicken + curry well.
Cover the slow cooker and keep the setting on “low” and let it cook for 5 hours.
If you want some delicious rice to serve with this chicken curry just add some white jasmine rice to boiling water, then cover and set heat to low a half hour before serving with this dish.
