Use a fine colander or sift any small oat particles out.
Toast your sifted oats in a non stick pan on medium high until they are fragrant and lightly brown(2-3 minutes).
Remove from pan and set aside in a bowl.
Add your sugar and set pan on medium low until sugar has melted and become caramelized; then add your butter and lightly stirring it in as it melts.
Take the pan off the heat then add your oats/nuts/fruits +salt etc..
When it’s all mixed up well, place your still ooey gooey brittle on parchment paper or non stick foil like I had to do hehe! Let the brittle cool and then you can break it apart for more bite sized pieces!
*I placed another sheet of foil on top of the brittle to press it down into a more flattened traditional brittle shape.
