As a kid I always enjoyed riding my bike down to the one and only gas station in my town and buying a soda pop and something a little bit sweet and a whole lot salty! Sometimes I would even get lucky and find a FREE soda under my cap and those were the extra good days haha.

So now that i’m older and wiser I really don’t crave candy the same way that I once did as a caffeine injected child of yester-year.
But…
…I still very much enjoy a salty and sweet treat once in awhile.

Let me introduce you to my Salty Cranberry Peanut Brittle one pot recipe that can be made in as small or as large of a batch as you can stomach!
It’s fairly straight forward and I have included more pictures than I normally do for a simple recipe like this but caramelized sugar is just so darn tootin'(yup!) photogenic I had to share the full album with you guys!

Here is ALL you need…
Butter
Oats
Sugar
Nuts/fruit/granola(perfect)
Salt

Ingredients
Servings: cups
Instructions
  1. Use a fine colander or sift any small oat particles out.
  2. Toast your sifted oats in a non stick pan on medium high until they are fragrant and lightly brown(2-3 minutes). Remove from pan and set aside in a bowl.
  3. Add your sugar and set pan on medium low until sugar has melted and become caramelized; then add your butter and lightly stirring it in as it melts.
  4. Take the pan off the heat then add your oats/nuts/fruits +salt etc..
  5. When it's all mixed up well, place your still ooey gooey brittle on parchment paper or non stick foil like I had to do hehe! Let the brittle cool and then you can break it apart for more bite sized pieces!
  6. *I placed another sheet of foil on top of the brittle to press it down into a more flattened traditional brittle shape.
