Pulled BBQ Chicken Empanadas

For something i’ve never made before this really did turn out great! The ol’ Wiki says that the definition of an Empanadas is a stuffed bread or pastry that is either baked or fried. Empanadas are made by folding dough or bread around stuffing, which usually consists of a variety of meats, cheeses, fruits and vegetables.
I like to eat really good food but also keeping things on the healthier side if I can at all help it. So instead of messing with frying, this is a faster and less stressful recipe for baked Pulled BBQ Chicken Empanadas. The combinations you can make are endless but this time I chose BBQ chicken but add whatever you want and have fun with it. These are best when eaten while still warm and the crust on the outside is so very satisfying when biting into it! This can be intimidating at first with a lot of recipes giving you a long list of ingredients just for the dough but this is straight forward and simple so it can be an everyday quick dish or it can be something more elevated if you’ve got the determination and time to put into it.

- 1 1/4 Cup flour $0.16
- 1 tbsp sugar $0.01
- 1 tsp salt $0.02
- 1 Egg $0.16
- 1/4 Cup Milk $0.41
- 1/4 Cup Butter $0.49
- 1/4 Cup shredded cheese $0.30
- 1 Cup Frozen Corn
- Pre-heat oven In a bowl add flour, sugar, salt and mix together. *I added a little cayenne pepper, cumin, rosemary and chili powder.
- Add one egg, milk, soft butter and stir.
- Add wet ingredients to the dry and mix.
- Form into a ball of dough. * I used a little flour to dust my hands before handling the dough.
- Roll out the dough into however big you'd like keeping in mind you need to add your filling and still fold together.
- I used bbq chicken, frozen corn and shredded cheese as my filling.
- Place your dough on a greased baking sheet then add your filling and then fold the edges together and close your empanadas using a fork.
- I baked my empanadas at 375 degrees for 25 mins. *Butter the top of the dough before placing them into the oven for a brown crust.
