Veggie Peanut Curry

I’ve been busy in the kitchen again making “mostly” failed experiments that were too embarrassing to share. After looking around the net for different curry ideas I stumbled upon a peanut butter vegetable curry! I REALLY enjoy PB and I am expanding my knowledge of Indian dishes. Here in the Midwest we don’t see many readily available Indian cuisine shops; so we make do.
This is a great bulk budget minded meal. IT’s cheap, it’s simple, but most importantly it’s extremely good FOR you. It has some great nutritional specs. If you want more protein I would say to add a meat or a tofu. You could also add a dollop of Greek yogurt to this for a high protein and high probiotic meal.
*This goes really well with chicken or pork for a non-vegetarian option.
- 2 tsp Ground Cumin $0.06
- 1 tsp toasted sesame seeds $0.03
- 4 cloves Minced Garlic $0.08
- 1 tsp Ground ginger $0.04
- 4 tbsp Peanut Butter $0.48
- 1/4 cup Vegetable Oil $0.03
- 1/4 cup Vegetable Oil $0.03
- 2 tsp ground mustard/seeds $0.06
- 1 large chopped onion $0.65
- 2 tsp salt $0.01
- 1/2 tsp ground cayenne pepper $0.02
- 2 tsp mild curry powder $0.16
- 1 can roasted canned tomatoes(diced) $0.69
- 1 can tomato paste $0.40
- 1 can Full Fat Coconut Milk $1.20
- 2 cups veggies (kale, spinach, broccoli, beans, etc.) $0.60
- 1 large diced and roasted sweet potato $0.84
- To a food processor or a blender, add the peanut butter paste ingredients and process.
- It should look similar to this.
- Add oil to a pan and heat medium high until a sliced onion begins to sizzle. Add the mustard seeds/powder and chopped onion to the pan. SauteĀ“ for 3 minutes or until caramelized (light browning).
- Add curry powder, garlic, cayenne pepper, salt, and the tomato paste.
- Remember those already roasted sweet taters' you set aside? Yeah well grab em' and add those tasty taters into the mix!
- Add the coconut milk and roasted tomatoes. Simmer on medium low heat for 10-15 minutes or until curry has started to lightly bubble and has thicken up.
- Remove from heat and let it cool for a few minutes. "Look at that bright color!"
- Serve with a flatbread or maybe some of your favorite rice.
