I cut my tofu into small cubes.
This is optional if you do not like tofu.
Nori should be chopped into bite sizes pieces.
Oh boy, what a spread eh?!
In a medium pot heat the water to a small simmer and add in the Nori cooking uncovered for 5 minutes.
Add in the Miso paste and lightly stir. If the paste is thick you can add a splash of hot water with it in a separate bowl to thin it out before adding.
Add in the chopped onions, tofu, and kale.
Cook for another 5 minutes.
Add the Soba noodles to a pot of boiling water. Cook until noodles are tender 2-4 minutes.
Light and filling. This is a great winter or comfort food when your wanting something warm and quick. Enjoy my friends.
