Jerk Chicken Tacos

Today is a simple day. Chicken + tortillas+Caribbean jerk sauce=Jerk Chicken Tacos.
Not knowing what I had in my fridge yesterday I spotted a bottle of jerk marinade sitting behind the line up of rarely used condiments. Rarely, do I find time to marinate my meats properly these days, but I wanted to get back to the simple exploitation of full flavored marinated meals.
Yes, marinating does take some pre-planning but not much. Give yourself a good 20-30 minutes ahead of cooking time and you should be good to go with most meats.
*Here’s a trick that I read in the “4 Hour Chef’. . . if cooking steak at home and you want to get that same steakhouse quality in your t-bone, New York strip, sirloin, etc..place some salt on your steak put it into the freezer for 30-60 minutes before searing it in some butter. This is the best method I have found so far and it can be used with basically any other meat as well.
Now back to the game plan! If you hate jerks but love tacos; don’t worry this is still going to be a great recipe for you fine folks. Most people will have these ingredients on hand and can find this a good start if your new to home cooking.
- 3 boneless Chicken Thighs $2.18
- 3 flour tortillas $0.09
- 1 tbsp jerk sauce $0.07
- Place chicken thighs into a "Zip-Loc" bag with sauce and shake well to coat all of the chicken pieces. Place into refrigerator for at least 30 minutes to marinate before grilling.
- Divide chicken among three tortillas adding whatever condiments you'd like(I used dijon mustard). *Ideas. . . could be lettuce leaves, roasted peppers, hot sauce, sour cream, yogurt, spinach leaves, etc.
