How To Cook Lentils

Lentils are a high protein legume that leaves you feeling full and is one of the cheapest kitchen staples. It’s quite a bit like rice in that there are more than one variety, it’s cheap and it cooks exactly the same with a 2:1 ratio. I thought since I have so many recipes featuring lentils that it’s time to show everyone a basic instructional on how to prepare your lentils. This is a plain recipe just adding salt and pepper for taste but I recommend adding some sort of stock be it chicken, beef or vegetable stock to give it a full punch of flavor!
Take these instructions with a “grain of salt”(lol) as you will probably want to jazz it up a bit more than I did. For the sake of keeping it simple and straightforward I give you my how to cook lentils.
*1 cup of dried lentils makes about 2 1/2 cups when cooked.
*There are a slew of different lentils but remember that red lentils turn very mushy when cooked which is why it’s popular in soups and dal’s around the world.

- Lay out your dried lentils on a baking sheet to sift through them for any small pebbles, odd lentils or other debris. I have only ever found one or two very small pebbles in all the years I have done this so just take 30 secs before placing the lentils in a strainer and give them a quick rinse in the sink.
- Add 1 cup lentils and 2 cups water to a pot. *This is where you need to add any stock or seasonings you may be using.
- Bring to a boil.
- Bring the lentils down to a simmer by reducing the heat and cover/cook for about 15-20 minutes.
- After the lentils have cooked they will be much larger in size and volume(like rice) and should be soft but not easily breakable(unlike red lentils).
- Add a little salt and pepper to taste and you have just made lentils. *freeze them after they have cooled.
