Hot Curried Roasted Chickpeas

Finding healthy snacks is a challenge most of us have but it doesn’t HAVE to be that way. Chickpeas are a versatile bean that is used most popularly in hummus recipes as I have done many times. Another popular(at least in my kitchen) recipe for these beans is to just slap some oil and seasoning and roast them puppies!
This is both easy and cheap not to mention super fast!
THIS TIME I decided to go HOT wit’ it!…and no i’m not talking about a rap music video here lol.
Curry powder is sort of a funny thing; real curry powder comes from a multi seasoning and spice concoction rather in just one single container. The Brits invented the convenient modern curry powder of today so thanks guys!! I use it in almost everything and anything…eggs, chicken, ramen, rice, even oatmeal for a savory treat.
BEWARE that not all curry powders are created equal and it took a few times trying out really bland and boring curry powders before I found a couple that I like. You can of course always make your very own curry power/paste at home if your so inclined and happen to have the long list of ingredients on hand. Expect a future post of my take on making your own curry paste!
I used a hot curry powder and to me at least it still could have been a bit hotter so if you want to try a mild version first I won’t hold it against you haha.
- 1 15oz can chickpeas $0.72
- 1 tbsp Oil $0.08
- 1 tsp curry powder $0.10
- 1/2 tsp garlic powder $0.02
- 1/2 tsp onion powder $0.02
- 1/2 tsp salt & pepper $0.03
- Pre-heat your oven to 400 degrees(f). Drain and rinse your canned beans. In a bowl mix the beans and oil together followed by everything else to get them nice and coated.
- Spread your beans onto a non stick baking sheet and place into the heated oven for 20 minutes. *Every 10 minutes or so shake the baking sheet to make sure the beans cook evenly.
- When they are all done you can sprinkle on a little more salt if you'd like and either eat them now or place in a container and save them as a snack for later on.
