Grill or cook your chicken thighs and add whatever seasonings you want. Cook chicken about 8-10 minutes on each side or until fluids run clear when pierced.
I shredded my chicken thighs here and steamed some broccoli before adding to my tortillas.
Add chicken, broccoli and cheese to one side of your tortillas.
Fold said tortillas over so each end is touching one another.
Heat up some oil in a pan on the stove(medium high) then carefully place your tortillas into oil letting each side cook for only about 30-40 seconds each.
Place on a plate and cut down the middle and add some salsa for a dipping sauce!
