Healthy Chicken Quesadillas

There’s something great about these little crunchy cheesy guys that I have loved since childhood. They are cheap, fast and there are literally thousands of different combinations that are possible when you want to make something unique to your taste buds.
If your like me and you grew up on really awful unauthentic fast food Mexican style cuisines than you will really enjoy the full flavor of this recipe.
I decided to use chicken thighs for a bit more flavor from the higher fat content(don’t worry not all fat is bad for you) you can use any kind of meat or cut you want; heck make it completely vegetarian if that wets your whistle lol. I know there are a lot of folks who are afraid of broccoli; yes I said afraid becuase I never cared for broccoli growing up and refused to eat it anytime my parental governors(parents) tried in vein to make consuming this ugly disgusting food! I must say though I went from making faces of pure terror to gobbling up every ounce of broccoli on my plate…just as long as cheese was involved! So I believe most people out there who have this same fear of broccoli will maybe not love it but at least can tolerate and learn to enjoy this very nutritious side dish if paired with the holy cheesy goodness.
Like always, use my recipe as a stepping off point or follow it word for word up to you…enjoy!
- 2 chicken thighs $1.24
- 2 flour tortillas $0.24
- 1/4 cup shredded cheese $0.69
- 1 cup broccoli florets $0.42
- 2 tbsp olive oil $0.31
- Grill or cook your chicken thighs and add whatever seasonings you want. Cook chicken about 8-10 minutes on each side or until fluids run clear when pierced.
- I shredded my chicken thighs here and steamed some broccoli before adding to my tortillas.
- Add chicken, broccoli and cheese to one side of your tortillas.
- Fold said tortillas over so each end is touching one another.
- Heat up some oil in a pan on the stove(medium high) then carefully place your tortillas into oil letting each side cook for only about 30-40 seconds each.
- Place on a plate and cut down the middle and add some salsa for a dipping sauce!
