Fully Loaded Microwave Sweet Potato

I never ever had a hankering for sweet potatoes until well into my mid 20’s when eating healthy became important to me. I didn’t hate them or anything and I even enjoyed sweet potato pie at Thanksgiving but I just made them out to be something other than a weekly staple to enjoy and I still to this day don’t know why? =D
So now I want to show you my quick and Fully Loaded Microwave Sweet Potato…I usually only reserve the “loaded” portion for weekends but my preferred method(in case any of you were wondering) is to just add a little bit of salt and ground cinnamon and YUMM YUMM!
Basically all you have to do is get really angry and poke some holes into your potato and wrap it up like a mummy in a paper towel then nuke it for a few minutes add toppings and your all done; it’s really that simple.
This could easily be a whole meal in and of itself depending on how large a sweet potato you start off with.
- 1 Large Sweet Potato $0.58
- 2 tbsp Butter $0.16
- 1 tsp Brown Sugar $0.07
- 1 tsp Ground Cinnamon $0.03
- 1 tsp Parmesan cheese $0.04
- 1/2 tsp dried rosemary $0.00(garden)
- 1 tsp Chives $0.00(garden)
- 1 tsp Sea Salt $0.02
- Wash your potato to get any unwanted dirt off and then poke a few holes on all sides either with a knife or fork to allow for some of the heat to escape.
- Wrap the potato in a damp paper towel and then depending on the size of your potato microwave it for 6 minutes then check to see if the potato is softened up quite a bit(that's how you'll know it's done).
- Remove from the microwave and cut the two small ends off and also slice it down the middle looking like this.
- Add butter, sea salt, brown sugar, cinnamon, rosemary, cheese and chives.
