1) In two bowls, add buttermilk and flour separately. Mix into the flour salt, pepper, smoked paprika, and onion powder.
2) Drop a couple of tbsp’s into the flour mix to create those crispy clumps of breading like KFC does.
3) Coat a chicken thigh in buttermilk evenly then place into the flour and pressing down firmly on all sides. Repeat for other thighs.
*Use soy/almond/regular milk + 2 tbsp of lemon juice per cup to make buttermilk.
