Fried Pickled Chicken Sandwich

Another day, another dollar. Some days that dollar doesn’t seem to go as far as it once did, but fear not my budget conscious culinary friends. I’ve got a great recipe that will make that dollar feel as strong as it once did.
Make this for your family and maybe even throw some lettuce, ketchup, and cheese on it and your kids will ask for it again and again. This sandwich is all about adding layers to an already classic sandwich. This recipe is similar to a Chick-Fil-A style sandwich and that was this recipes inspiration.
The home made fried pickled chicken sandwich.
Ingredients
- 3 boneless skinless chicken thighs $1.34
- 3 hamburger buns/rolls $1.47
- 1/4 cup pickle juice/slices $0.22
- 1 cup self-rising flour $0.16
- 1 cup buttermilk (almond milk w lemon juice) $0.18
- 1/2 cup Oil $0.10
- 1 tsp Smoked Paprika $0.06
- 1 tsp onion powder $0.04
- 2 tbsp Butter $0.14
- 1 tbsp Black Pepper $0.04
- 1/2 tsp salt $0.01

Instructions
- To start, place chicken thighs, pickle juice, and a pinch of salt and pepper into a Ziplock bag.
- Let the juice marinate the chicken and break down the myosin (protein tissue) in the refrigerator for at least an hour, but it's best if it marinates overnight.
- Just a quick picture of most of the ingredients you will need.
- 1) In two bowls, add buttermilk and flour separately. Mix into the flour salt, pepper, smoked paprika, and onion powder. 2) Drop a couple of tbsp's into the flour mix to create those crispy clumps of breading like KFC does. 3) Coat a chicken thigh in buttermilk evenly then place into the flour and pressing down firmly on all sides. Repeat for other thighs. *Use soy/almond/regular milk + 2 tbsp of lemon juice per cup to make buttermilk.
- 1) In a deep skillet add oil, and heat on medium-high heat. Use a utensil that drains and lay your breaded chicken thighs into the hot oil. The oil should have a good 1/2 inch space from the top of the skillet so there is less mess. 2) Let the oil cook the chicken thighs for about 4 minutes per side or until the flour turns a deep golden color. *By laying the thighs into the oil there is no splash created. *Turn the heat down slightly if your chicken is cooking to fast.
- After about 8 minutes carefully "scoop" up the fried chicken thighs and place on a paper towel covered plate. Let it cool for a few minutes, and it will become crispy.
- Heat up some butter on the stove in a clean pot and toast the two hamburger buns on both sides. Place some pickles slices on the bottom bun.
- Arithmetically add or subtract any condiments to make the kind of sandwich you desire. Put it all together and have a bite of this easy, frugal, at home, fried pickled chicken sandwich.
