Curry + Eggs= My favorite new breakfast sandwich.
Curries are becoming a more and more popular food option here in the states. Traditional curries require a lot of exotic ingredients that most Americans don’t have just lying around the pantry. So, welcome to the great invention of curry powders.
This recipe can be made with whatever curry powder of your choosing but I will name off two that are my favorites so far. . .
Natco Madras Curry Powder-found at World Market.
Sharwood’s Hot Curry Powder-purchased via Amazon. Can sometimes be found at select Walmart’s.
Ingredients
- 4 hard boiled Eggs $0.84
- 2 tbsp mayonnaise $0.35
- 1 tbsp curry powder $0.24
- 1 tbsp Butter $0.10
- 4 slices bread $0.16
Servings: people
Instructions
- Start by placing your 4 eggs into a pot and adding just enough water to cove the eggs. Bring the water to a boil, then turn on medium low and cover to cook for about 10 minutes. *add a pinch of salt (easier to open)
- Drain and place your hard boiled eggs into a mixing bowl and add in the mayonnaise and curry powder.
- Use a fork to break the eggs apart and mix until everything is nice and slimy. . . can I use that word in a cooking site? Haha eh, yeah just mix well.
- Spread the butter onto some bread and add the curried eggs evenly. *Feel free to toast the bread if you'd like.
- Eat this sandwich whole or slice it up for a fancy style like I did.
