Chicken Pocket Calzone

I was taking advantage of our first real day of warm spring weather here by working in the garden planting my leafy greens. I worked up an appetite and was craving something cheesy but in a good way lol. Speaking of gardening; how many of my readers enjoy planting a few crops for their own cooking? I royally failed last season so this year I have dedicated more time and research into making my harvest as bountiful as possible. *I’ll keep you updated as I progress this season.
Okay back to the FOOD…this isn’t a typical calzone thus the “pocket” in the title. I used my own homemade pizza dough which involves two different flours and yeilds a whiter final product where as most traditional calzones are darker in color.
I like to show my failed experiments as much as my works of art(be it very limited displays before consumption). This wasn’t a complete failure and ended up tasting amazingly great and so it wasn’t a complete failure in my book!
However, even though I may have over judged my fillings I tried my best at the time and it still turned out great and I am happy with it and that’s really all you can hope to accomplish in the kitchen(and life).
So i’m sure you will make this recipe your own by adding a different meat, vegetables, cheeses, peppers, etc..just go get your chopping board out and your apron on(manly I know) and just have a good time with it, peace.
- 1 Boneless Skinless Chicken Breast(1 Large breast=2 servings) $0.76
- 1/4 cup tomato sauce $0.18
- 1/4 cup chopped onion $0.10
- 8''-12'' pizza dough $0.17
- 1/3 cup shredded mozzarella cheese $0.21
- 1/4 cup shredded cheddar cheese(slice) $0.15
- 1/2 cup Spinach(optional) $0.07
- 1 tsp Italian seasoning $0.03
- Cook your chicken breast then pre-heat your oven to 425°.(season with garlic, onion, etc..) Chop your onion. Spread a small amount of oil on baking sheet before laying on your dough. Spread your pizza dough on a baking stone or sheet to your desired size.
- Spread your tomato sauce, Italian seasoning, strips of chicken breast, onion, cheese and spinach on one side of your dough. *Remember to make a pocket we must leave enough room to flip one side of dough over onto itself.
- I really need to follow my own rules but you can learn from my mistakes lol. I may have stuffed my pocket to the maximum capacity but oh well it's not so much how it looks but how it tastes that matters ;D *Place folded pocket into oven and bake for about 15 minutes or until dough is cooked and firm.
- Ta da! There you have your very own Italian chicken pocket(calzone). If you want a more brown look try adding a tiny amount of oil to the dough before baking.
