Chicken Peanut Butter Stir Fry

There is chicken, then there is peanut butter; then there is putting chicken and peanut butter together! This concoction of wrongness is something I like because who wants to be stuck making the same boring recipes people have used over and over again? I give you the creamy Chicken Peanut Butter Stir Fry; so easy and tasty people will ask you to make it again without a doubt!
So I ask why not have a little fun and make a creative product that can be immediately or leisurely enjoyed for sometimes days. I admit, there are a ton of Thai inspired peanut favored dishes online that would be great for a traditional recipe but this is NOT that kind of take on it. I have fun experimenting and sharing my successes with ya’ll and hope to inspire the people who like me only a couple years ago to not be intimidated to try their hand at cooking great meals and being okay with a little failure(best way to learn and grown) and to just get in there and who knows you might find a natural knack for this stuff?…Isn’t it worth the effort to be able to feed yourself from scratch for the rest of your life?lol.
One quick comment I want to add here is when I could sometimes I like to just start adding different spices or seasonings as I go and I don’t always get the time to write every single ingredient I used. So use my recipes as a basic layout and go from there added or taking away anything you prefer. I did add a little soy sauce near the end and some crushed red pepper for a little fire but these are completely optional, have fun!
- 8 Oz Thin Spaghetti(noodles) $0.10
- 8 Oz Frozen Chicken $1.52
- 2 Cups Frozen Veggies $0.79
- 4 Tbsp Creamy Peanut Butter $0.48
- 1 Tbsp Olive Oil(optional) $0.07
- 1/3 Cup chopped onion(optional) $0.12
- 2 Cloves Garlic(optional) $0.04
- Cook your pasta by bringing water to a boil then add in pasta and a pinch of salt...drain. Add frozen chicken to a pot(wok) on medium high heat until nearly cooked while your pasta is going. *If you want to get down and dirty you can add oil, and saute your onions and garlic.
- When your chicken is about halfway cooked go ahead and add in your veggies. Add your pasta when you think your veggies have cooked enough.
- Add in your peanut butter and after a minute of heat mix it into the rest of the dish. Add in rep pepper, Siracha, soy sauce, sesame seeds, fish sauce etc...enjoy.
