Grab a mug or bowl and however many eggs you’d like and beat or whisk them until blended.
Pour beaten eggs into heated pan.
Add some pepper and chopped green onions and let cook for 8-10 minutes.
Lay on your cheese and spinach for that healthy kick! Add salt to taste.
Here’s where I think most people get frustrated the “folding” of the omelette but just use a spatula to fold one end slightly over the rest of the egg and then fold again to make a sort of egg burrito.
