Cheesy Chicken and Bean Fiesta!

Sometimes, okay more often than not it’s tough to get my creative cooking juices flowing so for days when that happens I like to just take a few ingredients throw them together and see what my end product will be without any real planning or strategy.
This could be a one pot sort of meal if you really felt like it and yes I usually feel that way lol. This is not the meal to cook for a new lady friend as you will not impress with your dish that looks like an elementary student claimed a gold star for this “work of art” and btw if you DO brave it out and ingest this before a hot date don’t count on a hot or steamy end to your night…unless you call farting under the covers a good nightcap?….I kid!
So here’s my hot mess for all of you to see and I hope when you eat it your also a HOT MESS!!!
- 1 Can Kindey, Pinto or Black Beans $0.78
- 6 Ounces Chicken(frozen) $2.43
- 1/3 Cup Shredded cheddar cheese $0.76
- 1/4 Cup Broccoli(frozen) $0.45
- 1/2 Cup Rice $0.12
- 1 Tsp Chili Powder(optional) $0.05
- 1 Tsp Ground Cumin $0.07
- 1 Tsp salt $0.02
- 2 Tbsp Salsa $0.26
- These are what I used for some reference.
- Cook some rice up!
- If your using frozen chicken and veggies go ahead and steam cook them. Stove top or microwave them while your waiting for your rice to fluff up a bit. After the rice is oh so nice and fluffily cooked add your beans, seasonings, chicken and veggies to the pot and heat.
- It should look similar to this...remember to only heat until beans are warm.
- Stop with your cheese while still warm then add your salsa for a different kind of good mess!! 😀
