Beantatoes

So awhile ago I was reading a book called the “4 Hour Body” by author Timothy Ferriss; I saw a chapter talking about the Slow Carb Diet. Now to be honest I didn’t need to go on a diet as I was an avid runner at the time and I hate the word diet as I think changing your lifestyle is a far far better route to take in life. I like to experiment and so I decided to give the diet a try for a few weeks just to see if all the claims had been true and to also hopefully learn more about how eating the right KINDS of foods would positively effect my body and my wallet. Eating the right foods you don’t feel the need to have snacks through out the day. The diet was a success but it became very boring and my goals had changed to strength training but I could see if someone really wanted to lose weight this would be a great way to go.
What is the slow carb diet?…to summarize it’s eating mostly meats, fats, and grains/vegetables(slow carbs) and only eating the disallowed foods one day a week.
- fish, chicken, beef, pork, etc..
- all vegetables
- beans, lentils, nuts, oils, etc..
You eat only slow digesting carbohydrates like beans and lentils to make you feel fuller longer and you eat the same related meals day in and day out. I wouldn’t recommend this diet for the long haul unless you enjoy the lack of variety in your meals but it is very effective to get people started on the right path and to see results the “right way” fast.
So this meal happens to fit into the slow carb diet and being that I have previous experience with it I wanted to share a helpful recipe to make it easier for anyone who is looking for a very tasty and healthier mashed potato rival!
It is a mashed potato replacement and I will tell you right now it tastes just as good maybe even better then the real deal! Now I need to work on a good gravy to go along with this recipe…maybe next time lol.
- 2 15oz cans great northern beans $0.84
- 4 cloves Minced Garlic $0.36
- 2 tbsp butter(coconut oil) $0.12
- 1/4 cup chopped onion $0.04
- Start by heating a non stick pan on medium high add your butter/oil and saute minced garlic and onions until tender.
- Add your drained beans to the pan and add your seasonings, turn heat to medium low and let it simmer for 15 minutes.
- Place beans into a food processor or blender and turn on high for 30 seconds. Add in your butter and salt & pepper to taste. Blend until it's mixed!
- Spoon out your fake mashed potatoes and enjoy while it's good n' warm!
- Tip-Place into a airtight container and it stays good for a couple of weeks with just a quick reheat or it's even good cold. =D
